I've dyed two old cashmere sweaters with acid dyes (brown and light grey) and both came out with splotchy, uneven color. I think I followed directions well and am wondering what might be causing this.

Also, does the Jacquard color dye remover work ok on cashmere?

The first thing that comes to mind is the possibility of unseen stains or contaminant, particularly as your pieces are older. Another possibility is that the dye wasn't completely dissolved when the sweaters were introduced to the dye bath.
You can use the color remover keeping in mind that as with the Acid dyes you will want to raise the temperature very slowly and allow the temperature to lower slowly.
Last, but not least, some colors discharge more readily than others so the dyes you've used may not be complete discharge.
