I have a nylon bag that's a rather bright green, something like Jacquard's 628 chartreuse. What color acid dye would I use to change it to a neutral grey? (It doesn't really matter what shade of grey.) I'm thinking something like 612 lilac, or am I imagining wrong? Worst case, I can just dye it jet black, which will eliminate the green cast altogether, but black is a last resort. I suspect something like 638 silver grey would leave a greenish cast showing through.

After taking a quick look at this [url="http://r0k.us/graphics/SIHwheel.html"]color wheel[/url] it seems to me as though you are on the right track with the [url="http://www.jacquardproducts.com/products/dyes/aciddye/colors.php"]612 Lilac[/url].
If you are able to do a little test run that would be best.
